Over telnet, it takes me a 3 hours from the point of the ISP installing the OS (the fastest part) and giving me the "su" login access.
I install and configure postfix, with domain + ip data from the ISP, and install the very useful "postfix log summarizer". Then we have imail send out through imgate, ok. then we point an MX at imgate to see if it goes through to imail.
I also give them a few command line tricks to watch the mailq, the maillog, etc.
There's also quite a few blah blah emails explaining what's going on. 3 hours is now what is comfortable and reliable (the OS install is 15 minute job using my instructions on the site).
AFAIK, everybody's pleased as punch with the results, my efforts or their own, and many are planning a 2nd Imgate to have MX 10 and MX 20.
I put in two last week, and have 3 more scheduled this week.
