Bill,
When you change Service settings, you must stop and restart that service, for the new settings to be used. So if you did not do that, your tries were not valid.
You only need to use the 'myname@mydomain.com' form if the domain in question is one without an IP address (although it will work for a domain with an IP, too).
Is there a firewall/proxy between IMail and the users?
Try opening a browser on the server and see how that works. If it works OK, then something about your network is causing the trouble.
