I don't think you can go back in 2000 either, but I've never heard that for sure. The process described in the following article probably still applies:

What's the full command if I want to convert my boot partition from FAT to NTFS?

Once I do this, will Win 2000 let me go back?? I know NT 4 didn't.

It is actually as simple as you have been lead to believe.

Not on 2000. There were a few good arguments for FAT partitions in NT but those have all been negated with 2000 since you can boot to a 2000 drive in console mode when you no longer have a working system and since 2000 doesn't need to be partitioned to be installed on larger drives.

NTFS has quite a few advantages, not the least of which are permissions and better use of larger (2 Gig+) drivers.
